Mexican Pork Carnitas
This Mexican pork carnitas recipe is incredibly flavorful and tender, perfect for filling tacos, burritos, or serving over rice. The slow cooker does all the work, infusing the pork with delicious spices and citrus juices.
Ingredients:
- 3 lbs pork shoulder, cut into chunks
- 1 onion, diced
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh lime juice
- 1/4 cup orange juice
- 1/4 cup chicken broth
- 1/4 cup chopped fresh cilantro
- Corn tortillas, for serving
- Additional toppings: diced onions, chopped cilantro, lime wedges, salsa, avocado slices
Instructions:
Place pork chunks in the slow cooker
Add diced onion, minced garlic, ground cumin, chili powder, dried oregano, salt, and black pepper to the slow cooker
Pour lime juice, orange juice, and chicken broth over the pork
Stir to combine all ingredients
Cover and cook on low for 8 hours or on high for 4 hours, until pork is tender and easily shreds with a fork
Once cooked, remove the pork from the slow cooker and shred it using two forks
Return the shredded pork to the slow cooker and stir in chopped cilantro
Allow the pork to soak in the juices for an additional 15-30 minutes on the warm setting
Serve the Mexican pork carnitas on warm corn tortillas with desired toppings such as diced onions, chopped cilantro, lime wedges, salsa, and avocado slices
