Gluten-Free Crispy Quinoa Cakes
Ingredients:
- 2 cups cooked quinoa
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup grated zucchini
- 1/4 cup finely chopped red bell pepper
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese make sure it's gluten-free
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 2 tablespoons olive oil, for frying
Instructions:
In a large mixing bowl, combine the cooked quinoa, gluten-free breadcrumbs, grated zucchini, chopped red bell pepper, sliced green onions, minced garlic, fresh parsley, grated Parmesan cheese, salt, and black pepper
In a separate bowl, whisk the eggs and then add them to the quinoa mixture
Stir until everything is well combined
Heat olive oil in a large skillet over medium heat
Form the quinoa mixture into patties, about 1/4 cup of mixture for each patty
Place the patties in the heated skillet and cook for about 4-5 minutes on each side, or until they are golden brown and crispy
Remove the quinoa cakes from the skillet and place them on a paper towel-lined plate to remove excess oil
Serve the gluten-free crispy quinoa cakes as a delicious side dish for lunch or dinner
