Keto Asian Chicken Noodle Salad
A refreshing and satisfying keto-friendly salad with Asian flavors, featuring grilled chicken, shirataki noodles, and crisp vegetables tossed in a zesty dressing.
Ingredients:
- 2 chicken breasts, grilled and sliced thinly
- 1 package of shirataki noodles, rinsed and drained
- 1 cup shredded cabbage
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 2 green onions, sliced
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- 2 tablespoons sesame seeds
- 2 tablespoons olive oil
- 2 tablespoons soy sauce or tamari for gluten-free
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1 teaspoon sriracha sauce optional
- Salt and pepper to taste
Instructions:
Pour olive oil, soy sauce, rice vinegar, lime juice, ginger, garlic, and sriracha if using into a small bowl and mix them together using a whisk
Grilled chicken, shirataki noodles, shredded cabbage, bell pepper, cucumber, green onions, and cilantro should all be put in a large bowl
Add the dressing to the salad and mix it all together until it's well covered
Add chopped peanuts and sesame seeds on top
Add pepper and salt to taste
Serve right away or put in the fridge until you're ready to serve
