Crunchy Vegan Peanut Butter Cups



These crunchy peanut butter cups are a tasty new take on an old favorite. When you add rice crispy cereal, each bite has a satisfying crunch.

Ingredients:

  • 1 cup dairy-free chocolate chips
  • 1/2 cup natural peanut butter
  • 1/4 cup coconut flour
  • 2 tablespoons maple syrup
  • 1/2 cup rice crispy cereal

Instructions:

Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth

Line a muffin tin with paper liners

Pour a small amount of melted chocolate into each liner, spreading it to cover the bottom

In a separate bowl, mix peanut butter, coconut flour, and maple syrup until well combined

Fold in the rice crispy cereal

Spoon the peanut butter mixture on top of the chocolate in each liner, pressing down gently

Pour the remaining melted chocolate over the peanut butter layer, covering completely

Place the muffin tin in the fridge for at least 30 minutes to set

Once set, remove the peanut butter cups from the liners and enjoy!
