Crunchy Quinoa Salad with Tahini Vinaigrette
A healthy and refreshing salad with quinoa, colorful vegetables, and a tasty tahini vinaigrette. This dish is great for a light but filling meal because it has a lot of different tastes and textures.
Ingredients:
- 1 cup quinoa, cooked and cooled
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, chopped
- 1/4 cup red onion, finely chopped
- 1/3 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup sliced almonds, toasted
Instructions:
Put the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and parsley in a large bowl
Toast the almond slices in a small pan over medium-low heat until they turn golden brown
Mix them in with the other things in the bowl
Add the tahini vinaigrette to a different bowl and mix it with a whisk
Add the tahini vinaigrette to the quinoa mixture and mix everything together until it's well mixed
Put the crunchy quinoa salad in bowls for each person and top with extra parsley and feta cheese if you like
