Easy Detox Quinoa Salad with a Lemon-Tahini Vinaigrette
A quinoa salad that is both healthy and refreshing, with bright vegetables, herbs, and a tangy Lemon-Tahini Vinaigrette dressing. For a light but filling meal, this salad is full of healthy foods.
Ingredients:
- 1 cup quinoa, rinsed and cooked
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/3 cup feta cheese, crumbled
- 1/4 cup almonds, toasted and chopped
Instructions:
In a large bowl, combine cooked quinoa, cucumber, cherry tomatoes, red bell pepper, red onion, parsley, and mint
In a small bowl, whisk together the Lemon-Tahini Vinaigrette
Drizzle the vinaigrette over the quinoa mixture and toss until well combined
Sprinkle feta cheese and toasted almonds on top
Toss again gently before serving
