Vegan Green Grits
Vegan green grits that are creamy and full of flavor, made with healthy spinach and savory seasonings. These are great for a comforting meal any time of the day.
Ingredients:
- 1 cup corn grits
- 2 cups vegetable broth
- 1 cup almond milk
- 2 cups fresh spinach
- 1/2 cup nutritional yeast
- 1/4 cup vegan butter
- Salt and pepper to taste
Instructions:
In a saucepan, bring vegetable broth and almond milk to a boil
Add corn grits gradually while stirring constantly to prevent clumps
Reduce heat to low and let the grits simmer for 20-25 minutes, stirring occasionally
Meanwhile, steam the spinach until wilted
Blend the wilted spinach with nutritional yeast until smooth
Once the grits are cooked, stir in the spinach mixture and vegan butter until well combined
Season with salt and pepper to taste
Serve hot, garnished with extra nutritional yeast if desired
