Cauliflower Dal
Cauliflower and red lentils cooked in a creamy coconut curry sauce make this vegan dish hearty and tasty. Spiced just right and served over rice.
Ingredients:
- 1 small cauliflower, cut into florets
- 1 cup red lentils, rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can 14 oz coconut milk
- 2 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions:
Add the onion, garlic, and ginger to a large pot and cook them until they become soft
After you add the cauliflower florets, cook for 5 minutes
This dish needs curry powder, cumin, turmeric, paprika, salt, and pepper
Add the red lentils, coconut milk, vegetable broth, and stir them all in
Once it starts to boil, lower the heat and let it cook for 20 to 25 minutes, until the cauliflower and lentils are soft
If you need to, change the seasoning
Put it on top of cooked rice and top with fresh cilantro
