Avocado Toast Salad
Ingredients:
- 2 ripe avocados
- 4 slices of whole grain bread
- 1 cup cherry tomatoes
- 1/2 red onion, thinly sliced
- 2 cups mixed greens e

- 1/4 cup fresh basil leaves
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
Preheat your oven to 350F 175C
Place the slices of whole grain bread on a baking sheet and drizzle with 1 tablespoon of olive oil
Toast the bread in the oven for about 10 minutes or until it becomes crispy and golden brown
Remove from the oven and let it cool
While the bread is toasting, cut the avocados in half, remove the pits, and scoop out the flesh into a bowl
Mash the avocado with a fork and season with salt and pepper to taste
In a separate bowl, combine the cherry tomatoes, red onion slices, and fresh basil leaves
In a small jar, mix the remaining 1 tablespoon of olive oil and balsamic vinegar to create the dressing
Shake well to combine
Once the toasted bread has cooled slightly, cut it into bite-sized pieces
To assemble the salad, place the mixed greens on a serving platter
Top with the mashed avocado, tomato mixture, and crumbled feta cheese
Drizzle the balsamic dressing over the salad
Finally, scatter the toasted bread pieces over the top of the salad
Serve immediately and enjoy your delicious Avocado Toast Salad!
