Best Chicken Tortellini Soup
This chicken tortellini soup made in a slow cooker is the best comfort food ever. This dish is perfect for any occasion because it has tender chicken, hearty vegetables, and cheesy tortellini in a tasty broth.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 cup frozen cheese tortellini
- 2 cups baby spinach leaves
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
Diced chicken, carrots, celery, onion, garlic, chicken broth, thyme, oregano, and bay leaf should all be put in a slow cooker
Set the cooker to low for 6 to 8 hours or high for 3 to 4 hours
Remove the lid and cook until the chicken is done and the vegetables are soft
Put frozen tortellini and spinach in the slow cooker about 30 minutes before you want to serve
Add pepper and salt to taste
Once the tortellini is done and the spinach has wilted, take out the bay leaf and serve the dish hot with grated Parmesan cheese on top
